Fluffy Vanilla Protein Pancakes

Ingredients:

  • 1 1/2 Cups Rolled Oats
  • 1/2 Cup Greek Yoghurt
  • 2 Tbsp Reflex Essential Protein
  • 2 Tbsp Coconut Oil, melted
  • 1/2 Tsp Vanilla Extract
  • 1 Tbsp Honey
  • 3 Tsp Baking Powder
  • 3 Eggs 

Method:

Add your oats to a blender and blitz into a fine oat flour. Next, add the remaining ingredients and blend until you have a smooth batter.

Heat a small frying pan on a medium heat with a couple of sprays of oil. Pour the mixture into the pan and cook for about 1 minute on each side. Stack and serve with whatever toppings you fancy.
